Spinach can survive in some cold which tells us that you can plant them a little bit earlier in the year than more sensitive plants.

The earliest that you can plant spinach in Zone 8b is February. However, you really should wait until March if you don't want to take any chances.

The last month that you can plant spinach and expect a good harvest is probably September. You probably don't want to wait any later than that or else your spinach may not have a chance to fully mature. If you are starting your spinach indoors then you might be able to get away with starting them a few weeks earlier.

Last Frost Date

In Zone 8b the average date of last frost happens on March 15. It might get as low as 15°F during the coldest months of winter.

Keep in mind that the actual date of last frost is not always accurate because it is based on the USDA zone info for Zone 8b and it is different every year. Half of the time in Zone 8b it frosts late in the year after March 15 so just be sure to be ready to protect your spinach if you have one of those late frosts.
