A common way of making a decision about when it's possible to plant winter savory is to use the USDA zone info for Ontario.

Planting Calendar for Winter Savory

Frost tolerance for winter savory:	Tolerant of some frost.
When to plant:	Up to 5 weeks before last frost.

Since winter savory do well in moderate cold you can plant them a little bit earlier in the year than other plants that might not handle the cold.

The earliest that you can plant winter savory in Ontario is January. However, you really should wait until February if you don't want to take any chances.

The last month that you can plant winter savory and expect a good harvest is probably October. You probably don't want to wait any later than that or else your winter savory may not have a chance to really do well. You can get started a few weeks earlier by starting your winter savory indoors.

Last Frost Date

On average the last frost when the weather gets warmer is on January 31 in Ontario. In the coldest months of winter you should expect an average low temperature of 30°F.

Since the USDA zone info for Ontario is not always accurate the actual date of last frost changes from year to year. Since half of the time in Ontario last frost occurs after January 31 be ready to protect your winter savory if you have one of those late frosts.

This means that on a really cold year, the coldest it will get is 30°F. On most years you should be prepared to experience lows near 35°F.
